Vegan Lentil Salad

A healthy and refreshing salad with cooked lentils, crisp vegetables, and a tangy dressing.

Ingredients:

  • 1 cup green lentils, cooked
  • 1/2 red onion, finely chopped
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 garlic clove, minced
  • Salt and pepper, to taste

Instructions:

The cooked lentils, red onion, bell pepper, cucumber, parsley, and mint should all be put in a large bowl together

Mix the garlic, salt, pepper, olive oil, and lemon juice in a small bowl with a whisk

Add the dressing to the lentil mix and mix it all together by tossing

Let it sit at room temperature or in the fridge
