Ingredients:
- 1 cup Libyan couscous
- 1/2 pound lean beef, thinly sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 zucchini, sliced
- 2 tomatoes, diced
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper adjust to taste
- Salt and black pepper to taste
- Fresh cilantro leaves for garnish
Instructions:
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat
Put in the sliced beef and cook it until it turns brown
Take it out of the pan and set it aside
Add the chopped onion and minced garlic to the same skillet with the rest of the olive oil
Saut them until they smell good and turn clear
Slice the red and green bell peppers and add them to the pan along with the diced tomatoes and zucchini
The vegetables should start to get soft after about 5 minutes of cooking
Fill the pan with ground cumin, ground coriander, paprika, cayenne pepper, salt, and black pepper
Then add the cooked beef back to it
The spices should be well mixed into the food
Follow the directions on the package for making Libyan couscous in a separate pot
Most of the time, you need to boil water, add couscous, cover, and let it steam for 5 to 7 minutes, until its fluffy and cooked
Put the spicy beef and vegetable mix on top of cooked Libyan couscous
For extra flavor and freshness, top with fresh cilantro leaves
