Crispy Bubble Potatoes are irresistibly crunchy on the outside and tender on the inside. They make a perfect side dish for any meal
Ingredients:
- 1 kg baby potatoes, washed
- 3 tablespoons olive oil
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon paprika
- Salt to taste
- Pepper to taste
- Fresh parsley, chopped for garnish
Instructions:
Preheat oven to 200C 400F
In a large pot, boil the baby potatoes until they are just tender, about 10 minutes
Drain and let them cool slightly
On a baking sheet, toss the boiled potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper until evenly coated
Arrange the potatoes in a single layer on the baking sheet and roast in the preheated oven for 30-35 minutes, flipping halfway through, until golden brown and crispy
Garnish with fresh chopped parsley before serving
