Ingredients:
- 3 lbs pork shoulder, trimmed and cut into chunks
- 1 cup barbecue sauce
- 1/2 cup apple cider vinegar
- 1/3 cup brown sugar
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 cup water
- 8 hamburger buns
- Coleslaw optional, for serving
Instructions:
To make the BBQ sauce, put corn syrup, apple cider vinegar, brown sugar, Dijon mustard, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, black pepper, and apple cider vinegar in a bowl
Put the pork chunks in the Instant Pot and cover them with BBQ sauce
Toss the pork to cover it all over
Make sure the Instant Pot has enough water for pressure cooking by adding water
For 90 minutes, put the Instant Pot on Manual or Pressure Cook mode and make sure the lid is on tight
After the food is done cooking, let the pressure drop naturally for 10 minutes before releasing the rest of the pressure by hand
Take the pork out of the pan and use two forks to shred it
In the Instant Pot, mix the shredded pork with the rest of the sauce
Put the BBQ pulled pork on hamburger buns and, if you want, top them with coleslaw
