A delicious and easy one-pan meal featuring tender chicken breasts and flavorful potatoes seasoned with garlic, lemon, and Mediterranean herbs. Perfect for a quick weeknight dinner or a cozy family meal.
Ingredients:
- 4 chicken breasts, boneless and skinless
- 4 medium-sized potatoes, diced
- 4 cloves garlic, minced
- 2 lemons, juiced and zested
- 2 tablespoons olive oil
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
Get the oven ready by heating it up to 400F 200C
Lemon juice, lemon zest, olive oil, dried oregano, dried thyme, dried rosemary, salt, and pepper should all be mixed together in a bowl
On a large baking sheet or roasting pan, put chicken breasts and diced potatoes
Spread the chicken and potatoes out so they are all covered in the garlic, lemon, and herb mixture
Lay everything out in a single layer so that it cooks evenly
Place the dish in an oven that has already been heated
Bake for 25 to 30 minutes, or until the chicken is fully cooked and the potatoes are soft
Halfway through cooking, flip the chicken and stir the potatoes
Before serving, sprinkle with fresh parsley
