This Greek Tortellini Salad is a tasty and filling pasta salad made with cheese tortellini and the flavors of a traditional Greek salad. Its great for potlucks, picnics, or as a light lunch or dinner.
Ingredients:
- 1 package cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
Follow the directions on the package to cook the tortellini
Let it cool down after draining
Put the tortellini that has been cooled down, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and parsley in a large bowl
Put the olive oil, red wine vinegar, dried oregano, salt, and pepper in a small bowl and mix them together with a whisk
Add the dressing to the salad and gently toss to mix
Put it in the fridge for at least 30 minutes before serving so the flavors can mix
