Ingredients:
- 1 lb beef sirloin, thinly sliced
- 1 onion, thinly sliced
- 1 bell pepper, thinly sliced
- 2 cups shredded cheese such as cheddar or Monterey Jack
- 4 large flour tortillas
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions:
Heat a skillet over medium-high heat and add 1 tablespoon of vegetable oil
Add the sliced beef to the skillet and season with salt and pepper
Cook until browned, about 3-4 minutes per side
Remove from the skillet and set aside
In the same skillet, add the remaining tablespoon of vegetable oil and saut the onions and bell peppers until softened, about 5 minutes
Return the cooked beef to the skillet and toss with the onions and bell peppers until evenly combined
Lay a tortilla flat and sprinkle 1/2 cup of shredded cheese evenly over one half of the tortilla
Spoon some of the beef mixture over the cheese and fold the tortilla in half, pressing down gently
Repeat with the remaining tortillas and beef mixture
Heat a clean skillet over medium heat and cook each quesadilla until golden brown and crispy on both sides, about 2-3 minutes per side
Remove from the skillet and let cool slightly before cutting into wedges
Serve hot with your favorite dipping sauce or toppings
