Ingredients:
- 1 lb ground beef
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 can 14 oz diced tomatoes
- 1 can 14 oz kidney beans, drained and rinsed
- 1 can 6 oz tomato paste
- 2 cloves garlic, minced
- 2 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- Tortilla chips
- 2 cups shredded cheddar cheese
- Sour cream for topping
- Sliced jalapeos for garnish
- Fresh cilantro leaves for garnish
Instructions:
In a large skillet, cook the ground beef over medium heat until browned
Drain excess fat
Add chopped onions and red bell peppers to the skillet
Cook until the vegetables are soft
Stir in minced garlic, chili powder, cumin, paprika, salt, and pepper
Cook for another minute until fragrant
Add diced tomatoes, kidney beans, and tomato paste to the skillet
Stir well and simmer for 10-15 minutes, allowing the flavors to meld
Preheat your oven to 350F 175C
Arrange a layer of tortilla chips on a large oven-proof platter or baking sheet
Spoon the chili con carne mixture over the chips, spreading it evenly
Sprinkle shredded cheddar cheese over the top of the chili
Bake in the preheated oven for about 10 minutes or until the cheese is melted and bubbly
Remove from the oven and let cool slightly
Serve the chili con carne nachos with dollops of sour cream, sliced jalapeos, and fresh cilantro leaves
