On hot summer days, these Strawberry Pina Colada Popsicles are a great way to cool off. For a delicious tropical twist, they mix the sweet and sour tastes of strawberries and pineapples with the creamy texture of coconut milk.
Ingredients:
- 1 cup fresh strawberries, hulled and chopped
- 1 cup canned coconut milk
- 1/2 cup pineapple chunks
- 1/4 cup pineapple juice
- 2 tablespoons honey or maple syrup
- 1/2 teaspoon vanilla extract
Instructions:
Strawberry chunks, coconut milk, pineapple juice, honey or maple syrup, and vanilla extract should all be put into a blender
Mix until its creamy and smooth
Place the mix into popsicle molds
Place popsicle sticks inside the molds
Put it in the freezer for at least four hours, or until its solid
Take the popsicles out of the molds and enjoy once they are frozen
