Broccoli Quinoa Soup with Spicy Roasted Chickpeas

With crunchy, spicy roasted chickpeas on top, this hearty and healthy soup is made with quinoa and broccoli. This healthy dish is great for a meal that makes you feel good.

Ingredients:

  • 1 cup quinoa, rinsed
  • 4 cups broccoli florets
  • 1 can 15 oz chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup almond milk
  • Salt and pepper to taste

Instructions:

Preheat the oven to 400F 200C

In a bowl, toss chickpeas with olive oil, smoked paprika, cayenne pepper, salt, and pepper

Spread the chickpeas on a baking sheet and roast for 20-25 minutes, until crispy

In a large pot, saut onion and garlic in olive oil until softened

Add broccoli, quinoa, vegetable broth, and almond milk to the pot

Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes until quinoa is cooked and broccoli is tender

Season with salt and pepper to taste

Serve the soup topped with spicy roasted chickpeas
