Ingredients:
- 1 cup quinoa, rinsed
- 4 cups broccoli florets
- 1 can 15 oz chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup almond milk
- Salt and pepper to taste
Instructions:
Preheat the oven to 400F 200C
In a bowl, toss chickpeas with olive oil, smoked paprika, cayenne pepper, salt, and pepper
Spread the chickpeas on a baking sheet and roast for 20-25 minutes, until crispy
In a large pot, saut onion and garlic in olive oil until softened
Add broccoli, quinoa, vegetable broth, and almond milk to the pot
Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes until quinoa is cooked and broccoli is tender
