Macaroon Ice Cream Sandwiches

These delicious ice cream sandwiches with macaroons are a great treat for any event. The homemade ice cream is smooth and creamy, and the two delicate macaroon cookies make a great combination of tastes and textures.

Ingredients:

• 1 cup sweetened condensed milk
• 2 cups heavy cream
• 1 teaspoon vanilla extract
• 8 macaroon cookies

Instructions:

In a large mixing bowl, combine sweetened condensed milk and vanilla extract

In another bowl, whip the heavy cream until stiff peaks form

Gently fold the whipped cream into the condensed milk mixture until fully combined

Spread the mixture evenly onto a baking dish lined with parchment paper

Cover with another sheet of parchment paper and freeze for at least 6 hours or until firm

Once the ice cream is frozen, scoop portions onto one macaroon cookie and sandwich with another macaroon cookie

Serve immediately or store in the freezer until ready to eat
