Use floured paper to make a big circle or oval shape out of the pizza dough

It should be about 1/4 inch thick

Combine well

The ricotta mixture should be spread out evenly over half of the rolled-out dough, leaving some space around the edges

If youre using them, sprinkle mini chocolate chips and candied fruit on top of the ricotta mixture

To make a half-moon shape, fold the other half of the dough over the filling

To seal, press the edges together

For a golden finish, brush the egg wash over the top of the calzone

Put the calzone on a baking sheet that has parchment paper on it

The calzone should be baked in a hot oven for twenty to twenty-five minutes, or until it turns golden brown and puffs up

Take it out of the oven and let it cool down a bit
