Ingredients:
- 3 envelopes unflavored gelatin about 21 grams
- 1 cup cold water
- 2 cups granulated sugar
- 1/2 cup corn syrup
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Pink, purple, and blue food coloring
- Powdered sugar, for dusting
Instructions:
Mix the gelatin with 1/2 cup of cold water in a mixing bowl
Give the gelatin ten minutes or so to bloom
Place the corn syrup, granulated sugar, and the remaining 1/2 cup of water in a saucepan over medium heat
Stir the mixture until it reaches 240F 115C on a candy thermometer and the sugar has completely dissolved
When the sugar syrup reaches the proper temperature, gradually add it to the gelatin mixture while using an electric mixer to mix on low speed
When the mixture is thick, white, and fluffy, increase the mixer speed to high and beat for ten to twelve minutes
In the last minute of beating, add the vanilla extract and salt
The marshmallow mixture should be divided into three equal parts
Put food coloring in three different colors: pink, purple, and blue
Combine all of them until the unicorn colors you want are achieved
In a 9 x 9-inch baking pan lined with parchment paper, quickly drop spoonfuls of each colored marshmallow mixture to create a colorful pattern
To get a marbled effect, mix the colors together with a buttered knife or spatula
Allow the marshmallows to cure for at least four hours, or over night, at room temperature
Once set, turn the marshmallow slab out onto a cutting board dusted with powdered sugar
Add a little more powdered sugar on top
Cut your marshmallows into any desired shape or use cookie cutters shaped like unicorns
To keep the cut edges from sticking, dust them with extra powdered sugar
